Bajji – Using dry dal

If you dont have channa dal powder handy try this! Take one tumbler of channa dal and quarter tumbler of raw rice in the same container. Wash this and soak it for one hour. Take 4 red chillies, 2 pinches of perungayam powder and enough salt to taste in the mixie along with the soaked dal and grind it to very smooth consistency. Pour only enough water to grind. (Grind only after the dal soaks well for one hour). Pour this to a container or bowl and check whether the batter is of bajji consistency. The batter should not be watery. Now cut potato breadthwise very thinly and keep aside. Heat a shallow pan, pour required amount of oil (atleast half a litre) and after the oil gets heated up, dip the potatoes one by one in the bajji mixture and put it in the hot oil to be fried. Do not over crowd the pan. Put only enough potatoes that the oil can hold. Fry turning the bajjis often, take out the fried bajjis and do it with the rest of the potatoes. You can use your desired vegetables like carrot, apple, onion,capsicum,raw banana etc., For more bajjis at party time you have to use more dal and rice with the same ratio and the oil also to be added more. Enjoy eating bajjis even if you are not in your home town!
